FROM THE HEART

Our "agaves capones" are carefully selected and matured for up to 18 years before being cut and shaved to extract the best from their hearts.

The wide range of aromas and flavors are possible thanks to the time and passion to obtain an extraordinary mezcal.

THE SEDUCTION BETWEEN MAGUEY & FIRE

The agave hearts are placed in a conical oven dug into the ground where volcanic rocks, previously heated with firewood, are used to cover and bake the piñas over low heat for up to five days.

FROM BODY & SOUL

The freshly baked agave piñas are crushed using a 772 lb (350 kg) Tahona or mill, which is carved from quarry stone to obtain a paste with the agave fiber bagasse.

THE TRANSFORMATION OF THE SPIRIT

The crushed agave paste is placed in wooden jars exposed to the wild yeasts of the region, adding spring water extracted from deep wells to begin the transformation of sugars into alcohol.

THE GIFT OF THE GODS

This ancient passion and dedication inherited by generations of MAESTROS MEZCALEROS, culminates with a double distillation, in copper stills heated with wood to extract all the flavors and aromas, exceptional qualities carefully crafted for this mezcal.

SUSTAINABILITY

The preservation of this ancestral legacy implies a great responsibility and that is why we ensure that, for each agave harvested, two plants are grown.

We also promote the use of mixed crops to avoid the negative effects of monoculture and we contribute to the recycling of bagasse that is used to make bricks for the construction of housing in mezcal communities.
